Smoking

When you are setting up your charcoal grill for smoking, create two zones of fire. The charcoal grate is arranged with coals on one side and left empty on the other, resulting in two heat zones. There will be direct heat in one and indirect heat in the other.Smoking beef brisket, pork shoulder, and ribs are best.
