Cooking with Oak Brandy Smokin’ Wood Chips

If you cook with wood chips or chunks, the type of wood you use will ultimately affect the taste of the food. Our recommendation is to use hardwoods such as oak when cooking meats with strong flavours, such as beef. When smoking pork, apple or olive is often the preferred wood, and fruit and lighter woods are often paired with fish and vegetables.

Simply soak these wood smoking chips in water for 30 minutes before using them in your smoker. In addition to preventing the chips from burning too quickly, the water will help to add moisture to your meal. It is possible to use a smoking box or add the soaked chips directly to the charcoal in your smoker.

It is recommended that you use 1/2 cup of wood smoking chips per kilogram of food. It is possible to adjust the number of chips you use to achieve the desired level of flavour intensity. If you wish to achieve a milder flavour, use fewer chips. Adding more chips will result in a stronger flavour.

FAQ

The flavour of oak is medium smoky and not as strong as the one of apple or cherry, but it is lighter than that of hickory or mesquite.

The general rule is that you should not add more than 2-3 handfuls of wood chips to your smoker at once due to the fact that adding more than this will create excess smoke. As a result, the flavour of the meat may be overpowered, not to mention that creosote may be formed.
